I saw Gwyneth on The Chew yesterday and was really happy that she would be cooking something from her cookbook. And very happy it was something I haven’t tried! So, I guess you now know what we had for dinner – Chicken and Dumplings! I’ve made chicken and dumplings before…never in my life have they ever tasted this good! People, listen to me – out of this world delicious! – follow her directions. I only made a small addition – I added more white wine…probably a cup total. Uh huh… Oh yeah! Kicked it up! Please Please – season the chicken! It does take some time – but just think about the end product! Grab a glass of vino or bottle…keeping it real! Ha
Here’s my break down of her recipe -
I bought two whole chickens and broke them down myself – cheaper! If you don’t want to break your chickens down – buy 10 pieces. And now go forth – follow her recipe!
I did not use duck bacon – sadly, I was too late to the farmers market. I used regular bacon – yes, you can’t go wrong using regular bacon – its pork! Gwyneth doesn’t eat pork – she told me it was ok! So…I’m telling y’all, it’s ok!
I did not use fresh thyme leaves – because I forgot to buy them. Doh
I did not use vegetable stock – I had it, but went with chicken stock instead, because I had it, too! I make crazy decisions like that sometimes! Sometimes my decisions back fire – this did not back fire! You can use chicken stock – because I said so!
This is becoming a list of – I didn’t have or I forgot!
I forgot to buy half and half – I used what we had… Horizons Organic Milk.
You know where I’m going – as you can see by my photo…no fresh parsley for garnish.
I can describe this dish in one word – INSANE! If you haven’t bought her cookbook – My Father’s Daughter… Get It Now! I promise you’ll love it! I actually bought the real book months ago, I’m not sure if it’s available for an ebook.
