The other night I decided to test a pinned dinner I had on Pinterest – simply means, I picked out two meals on my “I’m A Foodie” board. I had chicken and potatoes that needed to be used. I decided on two recipes that had bacon – who doesn’t love bacon?! Chicken and Bacon. Mashed potatoes and Bacon. BACON. Oh, I had bacon!
Bacon Cheddar Mashed Potatoes - similar to my Ranch Cheddar Mashed Potatoes. The only change I made was that I added a couple tablespoons of bacon fat. They were tasty – but, yeah… Y’all knew there was a but – coming. I did not like the bacon mixed in with the mashed potatoes. I much rather reserve all the bacon for garnishing at the table. I like my bacon to be crunchy. Not limp. I don’t have a photo of the crunchy bacon – just use your imagination. See it? It was delicious! You’ll just have to take my word.
Foil Wrapped Chicken and Broccoli This was an easy prep recipe. I do feel like it was a waste of my time, though – and money. I hate wasting my time and money on food. Food is not cheap – nor is my time. I hate telling you – don’t try this…because honestly, other people have enjoyed it. So – it’s up to you.

Building your flavor layers – stuffing, chicken breast, and broccoli!

Stuffing, chicken breast, broccoli, cheddar cheese, BACON, and a spoonful of ranch dressing! Looks pretty, huh? Looks and tastes are two different things, y’all! Sorry to be a party pooper! It would have been better on a baked potato…or in a salad – I’m talking about the broccoli, cheddar cheese, crunchy bacon, and ranch dressing. The stuffing and chicken breast…were a no go!
It was tricky moving the chicken from the foil to the plate – the stuffing stuck to the foil…yes, even after I sprayed the foil with oil – I know how to follow a directions!
This was not the prettiest meal to photograph – but, would you look at that crunchy bacon on top of the bacon cheddar mashed potatoes – come to mama! Do you see what happened to the crunchy bacon that got wrapped in foil and baked? Sad.
Um, yeah – while the food was ok, I won’t be making either again. I wasn’t a huge fan of the wrapped chicken. No…not a fan of the wrapped chicken. AT.ALL. It was white. OK – it reminded me of an old mans ghostly white leg. I prefer my chicken grilled.
I’d give this meal a 2 out of 10 – while it looked good on paper, it did not follow through on flavor. I saved it for leftovers – that was a no go as well. The crunchy bacon was the best part -






It may not be pretty in the end, but looks so yummy!! And I so agree about the bacon. I hate limpy bacon. It just seems so uncooked and fatty to me. I like it crisp, so I would rather it on the side too. But glad to hear how it turned out, since it sounded so good to begin with!!
You know, I mean glad that it is something NOT to make, and waste hard earned $$$ on!
It did sound so good – I hate when recipes sound so good but fail
